Brewing Technician

F: You do a lot of different things at Fullsteam, from brewing to cellar. Have you yet settled into a routine, or is every day in brewing a new adventure?

MS: I've tried to settle into a routine, but every day at Fullsteam is a lot like the day-to-day weather patterns in North Carolina: it can change DRASTICALLY. Regardless, I'll always check in with each department from brewing, cellar, and packaging to see if I can squeeze in a task to help someone out in my day. We all love making great beer, but we love to clock out and drink it too.

F: What's your favorite (and least favorite) part of the job?

MS: My favorite part of the job is getting praise for making the beers that we all work so hard to make. There's nothing like a pat on the back from a tavern patron or a gold medal or two to raise the morale of a hard working team. The worst part has to be the days where it's 100 degrees at 9:00 AM with 75% humidity, but that could just be the residual Ohioan left in me.

F: How do you cheer yourself up during COVID-19? Any new hobbies you've picked up?


(And I was able to squeeze in some woodworking time which I have so missed doing.)

F: If you could travel anywhere in the world right now, where would you go?

MS: Ireland. My wife and I both have Irish bloodlines and genealogically, my wife's family has a small castle on an island out there which is on our bucket list; not to mention the Irish have a fine history in brewing and distilling

F: Your Team Fullsteam bio pick is the forage for the Wild Durham IPA. Why that picture? Anything particularly memorable from that day or the brewing session?

MS: I chose that picture in particular because I feel like it visually represents me pretty well. I have a dark sense of humor, love to laugh, and when things can get gloomy it's best to look at the little bit of brightness to keep your spirits high. The forage for that beer was a lot of fun, and it was my first as a brewer at Fullsteam and Hannah and I had a blast rummaging through the different neighborhoods of Durham looking for the ingredients for Wild Durham. I miss that beer.

F: How has being a new dad changed or shaped you?

MS: I'll give you the SparkNotes version of this novel:

  1. I learned what it is to live my life for someone else.
  2. There were lots of emotions from glee to fear and they've all built me stronger.
  3. Hope. Hope for all who raise children in this weird world to raise them to be better than the generations before them and to produce caring individuals. I never used to think about future generations.
